Depends on what perspective you are viewing from. For interrupts you have three views

+ Users is in User's Guide
+ BSP developer view is mostly covered in BSP guide
+ Porters view is in porting guide

Scheduling is documented in users guide and source code. There are multiple scheduling algorithms and you could provide your own.
