Hardware suggestion

Greetings all

I have just been asked to make a small server that will read and encode 
14 stereo pairs of audio and send them via UDP. I want to run RTEMS as 
the backbone. None of the streams need to be mixed with each other.  Can 
anyone suggest hardware to develop  this on.
